My BBQ
Grilling is something I love and take very seriously. Just the taste of something off the grill gives your food a unique taste that cooking regularly doesn’t give you. If I know I’m going to BBQ I love to season and marinate my meat at least 24 hours before so everything can seep into the meat. When I marinate for ribs I spread mustard on both sides of the meat then I add meat tenderizer and brown sugar, now I make a rub for my ribs which consist of different herbs and spices and apply to both sides. Chicken is basically done the same way minus the tenderizer and brown sugar, I can’t give all my secrets away but sometime you have to try different things that can bring your food to life. After 24 hours has passed and you are ready to start your pit you have to make sure your grill is hot enough for your food because if not your going to be out there for a while. If your using charcoal a trick is when you light your coals at first the fire is going to be radical, but then it will die down that’s not your cue to get started because it needs to light back up by itself and go back down again. This ensures that your coals are a nice orange red and is at the right temperature. Usually I start with the small stuff to test my heat like sausage and hot dogs this also give your pit a little more time to level itself out. After that’s done its time for the ribs and chicken put the ribs on the bone side first, as you know when grilling you’re going to have to check frequently to make sure everything is cooking evenly and you don’t get that burnt taste and appearance. With the ribs if you have a spray bottle put you some apple juice in there and spray your ribs this keeps them moist and adds a sweet taste. Don’t forget about your chicken because they will cook faster than your ribs. Since we marinated our ribs over night it’s going to make them nice and tender. Just like when frying chicken you will see blood starting to sneak out of your meat, make sure you cook your food all the way through slice your food in a few areas and make sure there is no blood on the inside. Remember real good BBQ doesnt need BBQ sauce but you can add if you like.
